Does that mean that Unix-domain sockets are disabled by default? Why on
earth would anyone NOT want Unix-domain sockets on a machine, except to
build one of these really-really-stripped-down boxes?

Unix-domain sockets should be there normally, unless you go out of your
way to disable them... they're part of the expected Unix semantics.
