There are some (on-line and paper) books on the Linux kernel.
You can also start in /usr/src/linux/Documentation and read from there. If there's some thing you are particularly interested in, you should probably just start reading the sources, since most of the sources are pretty clean and well commented anyway. A notable exception to this rule is the networking code, so look there if you need a real challenge :)
