Did you recreate your /dev/console as a major 5 device (instead of a symlink), while running 2.1.xx? If so, you need to make it a symlink again, b/c 2.0.xx does not work with a 2.1 /dev/console.
Another way to quickly check your setup: boot with 'linux init=/bin/bash'; if you get a shell prompt then your problem is somewhere in userspace (possibly the console as init tries to open it, but bash doesn't).
