Stability is a relative/subjective term. I've got two boxes running 2.0.23 (with the ping patch) with uptimes just over 100 days. Are they stable? Who knows? Maybe one will crash tomorrow. I've seen some complaints about 2.0.28, but I have 2 boxes (one a news server) up nearly 3 weeks with it.
2.0.27 has been doing occasional kernel lockups (software watchdog doesn't trigger reboot) on my home system...but I suspect it has a piece of hardware going bad...as I have 2.0.27 on lots of other systems without lockups. Then again, it could be a driver that doesn't like some of the unique (to me) hardware in my home system.
All you can really do is try out kernels until you find one you like. That 2.0.14 kernel might panic if someone hits you with big pings.
